Black pepper’s sensory profile comes from piperine (the pungency) and volatile essential oils (the aroma). To protect these aromas we offer whole peppercorns for long shelf aroma and ground pepper for convenience. Whole peppercorns are ideal for stocks, pickles, and slow braises where flavour infuses over time; fine ground is excellent for finishing steaks, kebabs, soups and eggs when even dispersion is needed. Freshly ground pepper delivers the brightest notes — for maximum aroma, store whole and grind just before use.
If toasting, do so lightly to open aromatics; avoid charring which gives a harsh, bitter note. For different uses request coarse or fine grinds as needed.
